VINEYARD
To craft our Cuvée 1698 we sour the grapes from the town of Bollenberg and
nearby villages (around 1.2miles from Bollenberg). These vineyards benefit
from a South or South East exposure to the sun. Directly across the street from
these Bollenberg vineyards sits our Grand Cru Pfingstberg vines, which receive a
similar exposure. The soils here are very complex with a high percentage of clay
and sandstone brought into the area from rock slides. The chardonnay grapes
that comprise this Cuvée are from a variety of clones originating in burgundy.
WINEMAKING
Our Cuvée 1698 is barrel fermented and aged for 9 months with consistent
stirring of the lees during the early stages. The Cuvée then goes through 100%
malolactic fermentation before being aged for 6 years on average in used French
oak barrels. The barrels have a very fine grain with a medium to high toast.
